
Roasted Cabbage Wedge Caesar
Delicious roasted cabbage wedges topped with tahini-yogurt Caesar dressing and crispy chickpeas. A healthy and flavorful dish that's perfect for dinner.
What you need

tbsp lemon juice

tbsp water
tbsp olive oil

head green cabbage

tsp dried oregano

tbsp maple syrup

tbsp capers

cup tahini
tsp pepper

tbsp parmesan cheese
tbsp greek yogurt

tsp dijon mustard

cup vegetable broth

tsp garlic

can chickpea
Instructions
1: Preheat the oven to 425°F. 2: Heat a large skillet over medium-high heat, add the oil then sear the cabbage on each side for 3-4 minutes until browned. Flip the cabbage so the wedges are facing up. 3: Add the broth to the skillet, then cover and place in the oven for 25-30 minutes. Remove the cover and place back in the oven for another 10 minutes, until the cabbage is tender. 4: For the chickpeas, add them to a sheet pan and roast for 10 minutes. Then add the oil, salt, oregano, and garlic, toss to coat, and return them to the oven for another 8 minutes. 5: While everything roasts, make the dressing by whisking all the dressing ingredients together in a bowl. 6: Plate the cabbage and top with the dressing, chickpeas, parsley, onion, and Parmesan.View original recipe
