head cauliflower

fl oz lemon juice
tbsp olive oil

tbsp dill

medjool dates

cup almond

bunch lacinato kale
Instructions
1: Preheat the oven to 425°F. 2: Make the honey mustard by combining olive oil, mustard, and honey in a small bowl. 3: Add the cauliflower, onions, and garlic to a sheet pan. Drizzle the mustard mixture over it, add salt and pepper, and toss to combine. 4: Bake for 35-45 minutes until the cauliflower is soft and crispy, tossing once or twice during cooking. 5: Once the cauliflower is done, remove it from the oven and begin to assemble the salad. 6: In a bowl, combine kale, roasted cauliflower, dates, almonds, dill, salt, pepper, lemon juice, and olive oil.
