
Roasted Moroccan Rack of Lamb
An easy yet delicious roasted Moroccan rack of lamb recipe, seasoned with a mix of spices including cocoa powder, cumin, coriander, and served with gluten-free sourdough and feta cheese. This dish is quick enough for weeknight dinners and makes excellent leftovers.
What you need
tsp coriander
pepper

tsp paprika

tsp garlic powder

salt

tbsp olive oil

tsp cumin

tsp cinnamon
Instructions
1: In a small dish mix together the spices- cocoa powder, cumin, coriander, paprika, cinnamon, and garlic powder. Set aside. 2: Pat the rack of lamb dry. Season generously with salt and pepper on all sides. 3: Heat olive oil over medium-high in a large oven-safe sauté pan. Sear the lamb, skin side down for 4 minutes until browned. Remove and set on a plate. 4: Cover the rack of lamb with the spice blend, making sure to get all areas of the lamb. 5: Place the rack on the baking sheet, and cook on the center rack for 20-25 minutes. 6: Remove from the oven, rest on the rack for 7-10 minutes, then place on a cutting board and slice between each bone.View original recipe
