
Roasted Shaved Cauliflower Bowls
A delightful dish featuring roasted shaved cauliflower, spiced chickpeas, and a creamy cashew dressing, perfect for a meal or a side. This dish is packed with flavor and fresh ingredients.
What you need

cup water
tbsp olive oil
head cauliflower

tsp dried oregano
cup fresh parsley
cup kale

tsp garlic powder
tsp pepper
red bell pepper

tsp chili powder

tsp honey

tsp paprika

tbsp tomato paste

tsp salt

cup raw cashews

tbsp white sesame seeds

can chickpea

tbsp white wine vinegar

pistachio

tbsp mustard
Instructions
1: Preheat the oven to 425°F. 2: Make the chickpeas by adding 2 tbsp olive oil, tomato paste, honey, 1/2 tsp salt, paprika, chili powder, garlic powder, and 1/2 tsp oregano to a small bowl and mix. Place chickpeas on a sheet pan and dry roast for 8 minutes, then toss with the olive oil mixture and roast for an additional 10-13 minutes. 3: Add cauliflower and sliced red onions to a sheet pan, season with remaining olive oil, salt, oregano, and pepper. Toss and roast for 30-35 minutes, tossing halfway. 4: While the cauliflower roasts, prepare the cashew dressing by blending all ingredients until smooth. 5: For the marinated onions, mix all ingredients in a small bowl and set aside. 6: Once the cauliflower is done, combine it with kale, bell pepper, marinated onions, and chickpeas on the sheet pan.
