
Roasted Veggie & Vermicelli Power Bowl
A delightful and addictive power bowl featuring roasted veggies, hot honey-sesame chickpeas, and a rich peanut sauce, perfect for a healthy meal prep.
What you need
broccoli

tbsp tamari soy sauce

tbsp peanut butter

tsp sesame oil
tsp salt

tbsp rice vinegar

tbsp olive oil

bunch scallion

tbsp white sesame seeds

carrot
tbsp honey

can chickpea

oz rice vermicelli

cashew
Instructions
1: Preheat the oven to 425°F. Line 2 sheet pans with parchment paper and set aside. 2: Make the veggies. Add the broccoli and carrots to one sheet pan, add the olive oil, salt, and paprika and toss to coat. Place in the oven for 30 minutes, flipping halfway. 3: Make the chickpeas. Add the chickpeas, olive oil, honey, salt, and 1 tbsp sesame seeds. Toss to coat and place on the second sheet pan. Spread out then add the remaining sesame seeds. Place in the oven for 17-19 minutes, tossing every five minutes. 4: While everything cooks, make the sauce by whisking together peanut butter, honey, soy sauce, vinegar, and sesame oil until smooth. Set aside. 5: Assemble the bowls with noodles, tamari soy sauce, sesame oil, half the scallions, veggies, chickpeas, cashews, remaining scallions, and drizzled sauce.View original recipe
