
Salmon & Cucumber Tartare
A no-cook summer meal with finely chopped sashimi-grade salmon, cucumber, scallions, and a flavorful sauce made with peanut butter, soy sauce, and lime juice. Perfectly paired with potato chips for a refreshing dish.
What you need

tbsp honey

tbsp sesame oil

fresh ginger

clove garlic clove

cup cucumber

tsp red pepper flake

cup scallion

tbsp sesame seed
tbsp tamari soy sauce

tsp miso

tbsp peanut butter

oz salmon
Instructions
1: Make the sauce by adding peanut butter, soy sauce, lime juice, honey, sesame oil, miso paste, minced garlic, grated ginger, and red pepper flakes (if using) to a small bowl. Set aside. 2: In a separate large bowl, combine the chopped salmon, cucumber, scallions, and sesame seeds. Add the sauce and toss to combine. 3: To serve, press the tartare mixture into a small bowl, cover with a plate, flip upside down and remove the bowl for a fancy serving presentation.
