
Salmon Picatta
A quick and easy one-pan Salmon Picatta meal ready in 15 minutes. Perfect for serving with veggies, pasta, rice, or bread, this dish features salmon cooked to perfection in a lemony buttery sauce.
What you need

salmon

tsp salt

tbsp capers
tsp pepper
parsley
tbsp olive oil
lemon zest
tbsp arrowroot starch

cup chicken broth
Instructions
1: Pat dry the salmon and season with salt and pepper. 2: Heat one tablespoon of olive oil over medium-high in a cast iron skillet. 3: Place salmon skin side up on the pan and cook for 3-4 minutes, then flip and cook for another 3-4 minutes. 4: Remove the salmon and set it on a plate. 5: Add 3 tablespoons of butter or ghee to the pan, then add the zest from 1/2 lemon, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and 1.5 cups of chicken broth mixed with 1 tablespoon of arrowroot starch. 6: Whisk together and bring to a simmer. 7: Add the salmon back to the pan and spoon the sauce over the filets. 8: Cook for a few minutes until the salmon is cooked through. 9: Garnish with parsley.View original recipe
