cup cooked quinoa

lb salmon
tbsp fresh parsley
tsp lemon zest
tbsp olive oil
tsp pepper

cup kale

Instructions
1: Cut the salmon into cubes and season with olive oil, salt, dill, oregano, and pepper. 2: Heat a pan and cook salmon until fully cooked. 3: In a bowl, combine the ingredients for the salsa: avocado, parsley, capers, feta, salt, pepper, lemon zest, lemon juice, and olive oil. 4: In another bowl, mix cooked quinoa with kale, red onion, olive oil, lemon juice, salt, and pepper. 5: Serve the quinoa mixture topped with the salmon and salsa.
