Salmon & Quinoa Salad

What you need
cup red onion

tsp dried dill
tsp pepper
avocado

tbsp capers
tsp lemon zest
cup greek yogurt

tsp salt

tsp dried oregano
tbsp fresh parsley

lb salmon

fl oz lemon juice
tbsp olive oil

cup cooked quinoa
cup kale

cup feta

pistachio nuts
Instructions
1: Make the salsa by combining avocado, parsley, capers, feta, salt, pepper, lemon zest, lemon juice, and olive oil in a small bowl. Mix to combine. 2: Season the salmon by adding it to a medium bowl with olive oil, salt, pepper, oregano, and dill. Toss to combine. 3: Heat a large skillet over medium high heat, add olive oil, then add the salmon and cook for about 2 minutes per side. Remove from the pan and set aside. 4: Make the quinoa by adding quinoa, kale, onion, olive oil, lemon juice, salt, and pepper to a large bowl. Toss to combine. 5: Assemble the plate by spreading a smear of yogurt onto a plate, adding a couple of large spoonfuls of the quinoa, some salmon, and a scoop of the salsa.
