tbsp applesauce

tsp fresh thyme

tbsp lemon juice

tsp salt

cup almond milk

tbsp cassava flour

tbsp coconut oil
Instructions
1: Preheat the oven to 425°F. 2: Add all dry ingredients (cassava flour, baking powder, salt) to a bowl and mix together. 3: In a cup, combine almond milk and lemon juice, and allow to sit for 5 minutes. 4: In a separate bowl, mix eggs, applesauce, sweet potato, coconut oil, and thyme. 5: Gently blend the wet ingredients together with a fork. 6: Combine dry ingredients with the wet mixture, including the almond milk mixture, using a stand mixer or hand mixer until a thick, slightly sticky dough forms. 7: Transfer the dough to a well-floured surface and press it down into a flat circle about 1 inch thick. 8: Use a biscuit cutter or drinking glass to cut out biscuit shapes and repeat with scraps. 9: Bake on a parchment-lined baking sheet for 17 minutes until golden brown on top.View original recipe
