
Sesame-Ginger Salmon Power Bowls
Delicious Sesame-Ginger Salmon Power Bowls topped with a lighter bang bang sauce and filled with vermicelli noodles, edamame, cucumber, carrots, and avocado.
What you need
cup english cucumber

tbsp olive oil

tsp sesame oil

fl oz sriracha
tsp salt

tbsp rice vinegar

lb salmon

tbsp greek yogurt

avocado

tbsp tamari soy sauce

cup edamame

tsp pepper
tbsp mayonnaise

tsp ginger

tbsp sweet chili sauce

oz Furikake

oz rice vermicelli

bunch carrot
Instructions
1: Make the bang-bang sauce and the noodle sauce. In a small bowl add the Greek yogurt, mayonnaise, sweet chili and sriracha. Mix to combine and set aside. In a separate small bowl add the soy sauce, rice vinegar, maple syrup and sesame oil and mix to combine. Set both aside. 2: Season the salmon. Add the salmon to a medium bowl with the sesame oil, salt, pepper, ginger and maple syrup. Toss to combine. 3: Heat a large skillet over medium high, add 1/2 tbsp olive oil. Add the salmon and cook for about 2 minutes per side. Remove from the pan and set aside. 4: Add the rice noodles to a bowl and toss with the noodle sauce. Divide the noodles between 2-3 bowls, then add equal amounts of edamame, cucumber, carrots, avocado and salmon.
