
Sheet Pan Shrimp Fried Rice
A healthy take on fried rice, made in one sheet pan. This easy recipe is packed with juiciest shrimp, crispy edges of rice, and a flavorful sauce, along with extra veggies for a fresh element. Perfect for meal prep!
What you need
tbsp honey

tsp ginger

tbsp soy sauce
oz shrimp

tbsp sesame oil
tsp garlic

tbsp rice vinegar

cup celery

cup cilantro

cup red pepper

onion

cup edamame

peanut
egg

cup cooked rice

tbsp coconut oil

carrot
tsp salt & pepper
Instructions
1: Preheat oven to 425°F. Add 1 tablespoon of oil to a sheet pan and include chopped red pepper, chopped onion, shredded carrots, and chopped celery. Bake for 15 minutes. 2: Remove from oven, then add cooked leftover rice and the sauce. Add salt and pepper to taste, mix to combine. Place back in the oven for 15-18 minutes until rice is slightly crisp on edges. 3: Add shrimp and a cracked egg along with chopped cilantro. Mix well and spread out. Bake for another 10 minutes until shrimp are cooked and opaque. 4: Remove from oven, add edamame and chopped cabbage. Top with peanuts if desired.View original recipe
