
Shrimp & Cauliflower Power Salad
This delicious Shrimp & Cauliflower Power Salad features roasted cauliflower and seasoned shrimp, combined with a creamy honey-mustard-ranch dressing. It's perfect as a light meal paired with rice or sweet potatoes.
What you need

tsp garlic powder

oz feta

tsp dried dill

tbsp honey
tbsp cornstarch
bunch parsley

tbsp dijon mustard

tsp turmeric

tsp salt

tsp dried oregano
head cauliflower
tsp pepper
tbsp olive oil

lb shrimp

cup sour cream

oz ranch mix
Instructions
1: Preheat oven to 425°F. Add cauliflower to a sheet pan, add the oil and seasonings, and toss. Roast for 30-35 minutes, tossing halfway. 2: Add the shrimp to a bowl, add the cornstarch, and toss. Add the seasonings and oil and toss again. Heat a pan over medium-high, add 1/2-1 tbsp oil, and cook for 2 minutes per side. Do this in batches so they are spread out. 3: Make the dressing. Add all ingredients to a bowl and mix to combine. 4: Add roasted cauliflower to a plate, top with shrimp, dressing, parsley, and feta.View original recipe
