
Shrimp Toast
A delicious summer toast featuring a salad made with fresh corn, tomatoes, cucumber, and avocado. Topped with juicy, taco-seasoned shrimp and a spicy jalapeño honey lime dressing. A perfect dish for brunch or a healthy lunch.
What you need

tbsp coconut oil
cucumber

tsp salt

tsp lime zest
tbsp olive oil
red onion

tbsp coconut aminos
bunch cilantro

tbsp lime juice

tsp garlic

tbsp apple cider vinegar

oz feta

tbsp taco seasoning
Instructions
1: Prepare the base by chopping cherry tomatoes, corn, avocado, cucumber, red onion, cilantro, and scallions. 2: Toast the GF sourdough until golden brown. 3: Sauté the shrimp seasoned with taco seasoning in coconut oil on medium-high for about 2 minutes on each side. 4: In a blender, combine lime juice, lime zest, coconut aminos, apple cider vinegar, chopped jalapeño, minced garlic, salt, and olive oil. Blend until smooth. 5: Assemble the toasts by layering the salad mixture on top of the toasted sourdough. 6: Top the salad with sautéed shrimp and drizzle with the jalapeño dressing. 7: Serve and enjoy!View original recipe
