
Shrimp & Vermicelli Power Bowls

What you need

honey
tbsp olive oil

tbsp lime juice

tsp paprika

tamari soy sauce

sesame oil

lb shrimp
tbsp cornstarch

tsp salt

tsp curry powder
broccoli

tsp garlic powder

cup raw cashews
tsp pepper
Instructions
1: Preheat the oven to 425°F. Line a sheet pan with parchment paper and set aside. 2: Make the broccoli. Add the broccoli to a sheet pan, add the oil, salt, and pepper and toss to coat. Drizzle with honey, then top with sesame seeds. Place in the oven for 20-25 minutes. 3: While the broccoli roasts, make the sauce. Add all sauce ingredients to a high-speed blender and blend until very smooth. 4: Next, make the shrimp. Add the shrimp to a bowl with cornstarch, salt, paprika, garlic powder, and olive oil. Toss to coat. 5: Heat a pan over medium-high, add a tablespoon of olive oil, then add the shrimp spread out (in batches if needed). Cook for about 2 minutes per side. Remove from heat. 6: Add the noodles to individual bowls, add a drizzle of tamari soy sauce and sesame oil, then toss.
