Quick skillet lunch with sautéed vegetables and egg whites, topped with avocado and roasted chicken, drizzled with coconut aminos.
What you need

cauliflower

greens

pepper

kabocha squash

red onion

tbsp coconut aminos

tbsp avocado oil

zucchini

tbsp coconut oil
Instructions
1: Sauté red onion, cauliflower, zucchini, and kabocha squash in coconut oil in a cast iron skillet. 2: Spray avocado oil and add egg whites to the skillet. 3: Put the skillet under the broiler to finish cooking. 4: Top with greens, roasted chicken breast, and half of a large avocado. 5: Drizzle with coconut aminos and add pepper before serving.View original recipe
