
Smashed Broccoli & Garlic
A delicious and comforting dish featuring smashed broccoli, garlic, and a creamy onion spread, reminiscent of cream of broccoli and French onion dip.
What you need
broccoli
tbsp olive oil

clove garlic

tsp balsamic vinegar

tsp mustard
bunch parsley

tsp sugar

tsp salt

tbsp cream cheese
lemon zest

tbsp butter

tsp dried oregano
tsp red pepper flake

tbsp sunflower seed

tbsp scallion

tbsp sour cream

tbsp granulated onion
Instructions
1: Preheat the oven to 425. Line a sheet pan with parchment paper and set aside. 2: Bring a large pot of salted water to a boil, add the broccoli and garlic and blanch for 4-5 minutes, until tender but not too soft. 3: Drain, discard the water and pat the broccoli dry. 4: Add the butter to the sheet pan, place in the oven for 1-2 minutes until the butter melts. 5: Remove the sheet pan from the oven, add the broccoli then the oil, salt, oregano and paprika. Toss to coat. 6: Take a flat-bottomed cup or bowl, then gently 'smash' the broccoli and garlic individually until all of it is smashed. 7: Place the broccoli in the oven for 20-25 minutes, flipping halfway, until the outside is charred. 8: While the broccoli is roasting, make the onion spread. Add the sour cream or yogurt, cream cheese, balsamic, mustard, onion granules, scallions, paprika, salt and sugar. Whisk until smooth. 9: Add the spread to a plate, spread out, top with the broccoli then the sunflower seeds, parsley, red pepper flakes and lemon zest.View original recipe
