
Smashed Cucumber & Avocado Salad

What you need

tsp sriracha

tbsp tamari soy sauce
tbsp honey
english cucumber

tbsp sugar

tsp sesame oil

cup edamame

cup fresh cilantro
tsp salt
tbsp tahini

tsp rice vinegar

tbsp olive oil

tsp red pepper flake
tbsp sesame seed

cup cashew

Instructions
1: Preheat the oven to 425°F and line a sheet pan with parchment paper. 2: Salt the cucumbers; add them to a bowl, sprinkle with salt and sugar, and let sit for 20 minutes. Drain the liquid and discard. 3: In a bowl, combine edamame, olive oil, honey, half the sesame seeds, red pepper flakes, and salt. Toss to mix, then spread on the baking sheet. Top with remaining sesame seeds and bake for 6-8 minutes until crisp. 4: In a small bowl, mix all dressing ingredients to combine. 5: Toss drained cucumbers with avocado, cilantro, and dressing.
