
Smashed Cucumber & Bell Pepper Salad
A refreshing smashed cucumber and bell pepper salad topped with a lemon-feta dressing, perfect for summer. This dish is easy to make and utilizes fresh ingredients like mini cucumbers, red bell pepper, and herbs, providing a satisfying and healthy side option.
What you need
tbsp fresh parsley

tsp salt

tsp black pepper
tsp lemon zest

tbsp lemon juice

tbsp olive oil

cup pistachio

cup feta
cucumber

tbsp scallion

cup dill
Instructions
1: Add the cucumbers to a bowl, season liberally with salt then set aside for ten minutes. 2: Drain the liquid from the cucumbers, but do not rinse. 3: While they sit, make the dressing. Add the feta, olive oil, lemon juice, lemon zest and pepper to a small bowl. Mix to combine and set aside. 4: To the bowl of cucumbers, add the peppers, dill, parsley, scallions, EBTB seasoning and the dressing. Toss to combine. 5: Top with the pistachios.View original recipe
