
Smashed Cucumber Salad

What you need

tbsp rice vinegar

tbsp soy sauce

tsp red pepper flake
tsp sesame seed

tbsp avocado oil

tbsp cane sugar

lb cucumber

jalapeno

tbsp cilantro
tsp garlic

tsp ginger

peanut
Instructions
1: Prepare the dressing by mixing soy sauce, rice vinegar, sesame oil, raw cane sugar, grated ginger, grated garlic, and avocado oil in a bowl. 2: Cut the ends off of 2 pounds of mini cucumbers, smash them, then chop them. 3: Place the chopped cucumbers in a bowl and sprinkle with salt and sugar; let sit for 20 minutes. 4: After 20 minutes, drain the liquid from the cucumbers and discard. 5: In a bowl, combine the cucumbers with minced jalapeño, chopped cilantro, sesame seeds, and the dressing. 6: Toss to combine and top with chopped peanuts if desired before serving.View original recipe
