
Smashed Radishes with Whip
These smashed radishes are buttery and tender, paired with a flavorful jalapeño avocado-cottage cheese whip. A delicious and trendy way to enjoy radishes, perfect for spring and quick meals.
What you need

clove garlic
cup parsley

pepitas
tbsp thyme leaves

cup cottage cheese

tbsp oregano

tsp salt

tbsp lemon juice

bunch arugula
avocado
lemon zest
tsp pepper
tbsp olive oil
lb radish

Instructions
1: Preheat the oven to 425. Place a sheet pan in the oven to heat while the oven preheats. 2: Add the radishes to a medium bowl with the olive oil, salt, and pepper. Toss to combine. Place the radishes cut-side down onto the sheet pan and roast for 20-23 minutes until fork tender. 3: While the radishes roast, make the avocado-cottage cheese spread. Add the avocado, cottage cheese, parsley, oregano, garlic, jalapeño, lemon juice, salt, and pepper to a food processor. Process until smooth, scraping down the sides as needed. Set aside. 4: Remove the radishes from the oven, then use a flat-bottomed cup or bowl to smash the radishes one at a time. After smashing, drain the liquid from the sheet pan and pat them dry with a paper towel. 5: Add the melted butter to the sheet pan, toss the radishes in the butter, spread them out, top each one with thyme leaves, and season with a bit more salt and pepper. Place back in the oven for 10-13 minutes, flipping halfway. 6: Spread the avocado-cottage cheese whip onto a plate, top with arugula, then the radishes, lemon zest, and pepitas.View original recipe
