
Spiced Honey Cauliflower Salad

cup greek yogurt
tsp lemon zest

tbsp honey

tbsp fresh cilantro
tbsp olive oil

tsp garlic powder

tsp salt
avocado

Instructions
1: Preheat the oven to 425°F and place a large sheet pan in the oven while it preheats. 2: Make the oil mixture by combining olive oil, 1/2 tsp salt, 1/2 tsp paprika, 1/2 tsp garlic powder, and 1/2 tsp cumin in a small bowl. 3: Make the yogurt mixture by combining Greek yogurt, remaining salt, paprika, garlic powder, cumin, honey, and cilantro in a small bowl. 4: In a large bowl, combine cauliflower with the oil mixture and toss to coat. Then add the yogurt mixture and toss again. 5: Spread the cauliflower on the hot sheet pan and roast for 35-40 minutes, tossing after 20 minutes and again 10 minutes later. 6: While the cauliflower roasts, make the cashew-herb mixture by mixing parsley, cilantro, cashews, olive oil, lemon zest, lemon juice, and honey. 7: Once cauliflower is ready, combine it with arugula, dates, red onion, avocado, and the herb mixture in a large bowl and toss to combine.View original recipe
