
Spiced Roasted Sweets
A delightful blend of roasted sweet potatoes paired with honey whipped goat cheese, seasoned with cumin and oregano, and topped with crushed pistachios and fresh basil.
What you need

tsp chili powder

clove garlic

tbsp cumin

fl oz honey

tsp salt

bunch fresh basil

fl oz lemon juice
tbsp olive oil

tbsp dried oregano
lb sweet potato

tbsp plain greek yogurt

tbsp corn starch

oz goat cheese

pistachio
Instructions
1: Preheat oven to 425°F. 2: Add the sweet potatoes to a large bowl, add the starch and toss. 3: Add the oil and spices to the sweet potatoes and toss again until well coated. 4: Place the potatoes on a baking sheet and bake for 30-35 minutes, flipping halfway. 5: While the sweets roast, make the goat cheese mixture. Add goat cheese, yogurt, lemon juice, oil, and garlic to a food processor and process for about 30 seconds until well combined and smooth (don’t over mix). Add honey and gently fold it in. 6: Spread the goat cheese mixture into the bottom of a bowl, top with the roasted sweet potatoes, drizzle with honey, and sprinkle with crushed pistachios and fresh basil.View original recipe
