
Spicy Scallop Ramen
A flavorful and comforting 15-minute spicy scallop ramen made with a rich broth. Packed with healthy ingredients, it can be served with your favorite protein, like scallops for a winning choice.
What you need

lb shiitake mushrooms

tbsp sriracha

tbsp olive oil

onion

tbsp coconut sugar

tbsp rice vinegar

bunch cilantro
tbsp fish sauce

tbsp tamari soy sauce
tsp fresh ginger

cup coconut milk

tsp sesame oil

tsp ground ginger
Instructions
1: Heat 1 tablespoon olive oil or coconut oil over medium high and add one chopped onion and 1 pound sliced shiitakes. Sauté for 3-5 minutes until soft. 2: Add 3.5 cups veggie broth, 1/2 cup coconut milk, 3 tablespoons white miso paste, 2 tablespoons rice vinegar, 2 teaspoons sesame oil, 1 teaspoon ground ginger (or 2 teaspoons fresh), 2 tablespoons coconut sugar, 1 tablespoon fish sauce, 1 tablespoon tamari soy sauce and 1-3 tablespoons sriracha (to adjust spice level). Whisk to combine. 3: Bring to a boil, then reduce to medium and cook for at least 10 minutes to allow flavors to develop. 4: While the broth is cooking, cook your scallops (if using). Pat them dry and season with salt and pepper. Heat 1 tablespoon coconut oil or ghee over medium high, then add 1 pound of scallops (in batches) spread apart. Cook for 2 minutes per side (for large scallops). Remove and set aside. 5: Fill bowls with broth. Add cooked noodles of choice, scallops, and a soft boiled egg.
