These Spicy Tuna “BLT” Quesadilla Melts are a deliciously quick meal, perfect for lunch. Combining light and creamy tuna salad with melty cheese, bacon, and fresh greens, these quesadillas can be made with or without dairy. They're not only flavorful but also easy to prepare, taking just about ten minutes to make.
What you need

tbsp mayo

salt

arugula

tbsp celery
Instructions
1: Mix together tuna, mayo, Greek yogurt, red peppers, celery, scallions, sriracha, salt, and pepper in a bowl. 2: Heat 2 tortillas over medium-high heat with a little oil spray. 3: Add 1/4 cup shredded cheese of choice on one side of each tortilla. 4: Top the cheese evenly with the tuna salad, arugula, and crumbled bacon. 5: Once the cheese begins to melt, fold the tortillas over and slice in half. 6: Top with chopped tomatoes and serve with mashed avocado.View original recipe
