
Spicy Tuna Sweet Potato Bites

tbsp tamari soy sauce

salt
red bell pepper
avocado

tbsp mayonnaise
pepper

tahini

tbsp chili paste
Instructions
1: Preheat the oven to 425°F. 2: Drizzle a large sheet pan with olive oil, brush to coat, and sprinkle with salt. Spread sweet potatoes on the sheet pan, brush with olive oil, and season with salt. Bake for 20-25 minutes, flipping halfway. 3: To make the tuna salad, whisk together mayonnaise, chili paste, and tamari in a medium bowl. Mix in bell pepper, mango, and ⅓ cup of scallions. 4: Drain the tuna and break into small pieces. Add to the bowl and mix. Then add avocado and season with salt and pepper, tossing to combine. 5: When sweet potatoes are done, plate them and scoop about 1 ½ tablespoons of the tuna mixture onto each round. Top with remaining scallions. 6: Serve topped with sesame seeds and drizzled with tahini if desired.View original recipe
