
Spinach & Artichoke Sweet Potato Bites
These Spinach & Artichoke Sweet Potato Bites are easy to make and perfect for any occasion like the Super Bowl. Made with roasted sweet potatoes topped with a savory mixture of artichokes, spinach, cream cheese, and Parmesan cheese, they are sure to be a hit!
What you need

tbsp salted butter

tsp salt

oz cream cheese

sweet potato

can artichoke

cup parmesan cheese
Instructions
1: Preheat the oven to 425°F. 2: Drizzle a large sheet pan with olive oil, then brush it to coat. Sprinkle the sheet pan with salt. 3: Spread the sweet potatoes onto a sheet pan and brush the tops with olive oil and season with salt. Place the sheet pan in the oven for 20-25 minutes, flipping halfway. 4: While the sweet potatoes roast, make the topping. Heat a sauté pan over medium-high heat. Add the butter, then the artichokes, spinach, and garlic. Mix to combine and cook for about 4 minutes, until the spinach is wilted. 5: Add the cream cheese and Parmesan cheese and mix to combine. Turn off the heat and keep mixing until the cream cheese is completely melted and mixed in. 6: Allow the sweet potatoes to cool for a few minutes, then place a spoonful of the topping on each bite.
