
Spinach Feta Boursin Stuffed Mushrooms
A last minute holiday appetizer featuring juicy mushrooms stuffed with a delightful mixture of spinach, Boursin cheese, feta, and Parmesan. Easy to prepare and absolutely delicious!
What you need
tbsp olive oil

yellow onion

oz boursin cheese

cup parmesan cheese

mushroom

oz feta
Instructions
1: Preheat the oven to 425°F. 2: Carefully remove the stems from the mushrooms and finely dice the mushroom stems. 3: Heat a sauté pan over medium-high, add the olive oil, onions, and diced mushroom stems. Sauté for 3-5 minutes until softened. Add the Boursin and allow it to melt and mix. 4: Turn off the heat and add the spinach, feta, and Parmesan to the pan and mix to combine to form a stuffing mixture. 5: Add the mushrooms to a baking dish, drizzle with olive oil, and season with salt. Add about 1 tablespoon of the stuffing mixture to each mushroom and press it down. 6: Top with additional Parmesan cheese, drizzle with olive oil, and place in the oven for 20 minutes.View original recipe
