
Stuffed Pepper Bites
Delicious mini peppers filled with a flavorful mixture of ricotta, feta, and spinach, perfect for any occasion, whether warm or cold.
What you need

tsp garlic powder

cup ricotta cheese

fl oz honey

tsp salt
tsp lemon zest

tsp pepper

tsp black pepper

bunch fresh parsley
tsp dried oregano

oz sunflower seed

oz feta

lb snack peppers

tbsp scallion

cup spinach
Instructions
1: Preheat the oven to 425°F. Trim the tops off of the peppers and set aside. 2: For the filling, add the ricotta, feta, dill, scallions, oregano, garlic powder, salt, and pepper to a food processor. Process until smooth. Then, add the spinach and lemon zest, mix until well combined. 3: Place the mixture into a ziplock bag or pastry bag, cut off the corner and fill the peppers with the filling until it begins to overflow. 4: Place the peppers on a sheet pan and bake for 15-18 minutes until peppers are slightly charred. 5: Serve and top with fresh parsley, lemon zest, sunflower seeds, honey, and black pepper.View original recipe
