
Summer Sweet Potato Tuna Melts
Delightful summer sweet potato tuna melts featuring Wild Planet's ready-to-eat salad. These melts have a base of roasted sweet potatoes topped with fresh mozzarella, tuna salad with cherry tomatoes, basil, and parmesan, then baked until melty and delicious.
What you need

fl oz olive oil

oz fresh mozzarella

tsp salt

cup fresh basil

cup parmesan cheese
sweet potato

cup cherry tomato

pistachio

bunch scallion
Instructions
1: Preheat the oven to 425°F. 2: Drizzle olive oil on the bottom of a large sheet pan, season with salt and pepper, and place the sweet potatoes face down. Drizzle the tops with oil and season with salt. Place in the oven for about 40 minutes, flipping halfway. 3: While the sweet potatoes roast, make the tuna salad. Add the Wild Planet Tuna White Bean Salads, tomatoes, fresh basil, and parmesan cheese to a medium bowl. Use a fork to break apart the tuna, mix all ingredients together, and set aside. 4: When the sweet potatoes are done roasting, remove them from the oven and gently mash each down with a fork to create a slight divot in the center. Top each with a slice or two of mozzarella, then divide the tuna mixture equally and spoon on top of the mozzarella. Place the sweet potatoes back in the oven for about 8-10 minutes until the cheese is melted. 5: Top the sweet potatoes with extra parmesan cheese, scallions, and pistachios, if using.View original recipe
