Instructions
1: Sauté 1/4 chopped onion in some oil on medium high for about 3 minutes. 2: Add 1 minced clove garlic and 1 tablespoon minced jalapeño; cook for 2 more minutes. 3: Add 2 cups cauliflower rice, 1 tablespoon water or broth, 1/2 teaspoon salt, 1/2 cup chopped cilantro, zest from one lime, and 1 tablespoon lime juice. 4: Increase heat to high and cook for about a minute to suck up the moisture. 5: Reduce heat to medium and cook until fragrant and to your liking. 6: Marinate 1 pound thawed wild shrimp in 2 tablespoons lime juice, 2 tablespoons orange juice, 1 tablespoon coconut aminos, 1 tablespoon olive oil, 2 teaspoons Chipotle chili powder, 1 teaspoon garlic powder, and 1/2 teaspoon salt for about 15 minutes. 7: Cook shrimp on medium heat in a skillet for about 3-4 minutes per side. 8: Towards the end, add the leftover marinade and allow the shrimp to coat in more deliciousness. 9: Top with cilantro.View original recipe
