
Sweet Potato Burrata Bites
Tender sweet potatoes topped with creamy burrata and a sweet & salty topping of pistachios, basil, and dates.
What you need

pinch salt
tsp lemon zest

cup basil

tahini

cup medjool dates
sweet potato

cup pistachio nuts
Instructions
1: Preheat the oven to 425°F. 2: Drizzle a large sheet pan with olive oil and sprinkle with salt. 3: Spread the sweet potatoes onto the sheet pan and rub the bottoms with the olive oil from the sheet pan then flip and season the tops with salt. 4: Place the sheet pan in the oven for 20-25 minutes, flipping halfway. 5: While the sweet potatoes roast, make the topping by adding the pistachios, basil, dates, lemon zest, and salt to a small bowl and mixing to combine. Set aside. 6: Place a spoonful of the burrata onto each sweet potato round. 7: Top them with the topping and drizzle with tahini, if using.View original recipe
