
Sweet Potato Goat Cheese Bites
Delicious sweet potato bites topped with a creamy goat cheese and ricotta mixture and a crunchy hazelnut-date crumble. These bites are perfect as appetizers for your Super Bowl gatherings!
What you need
tbsp olive oil
cup ricotta

cup goat cheese

fl oz honey
lemon zest

tsp salt

bunch arugula

tbsp rosemary

tbsp lemon juice
pepper
sweet potato

cup hazelnut

cup medjool dates

dash black pepper
fl oz liquid honey
Instructions
1: Preheat the oven to 425°F. 2: Make the butter: Add all ingredients for the butter to a small dish and mix to combine. 3: Spread the sweet potatoes onto a large sheet pan and brush the tops with the butter mixture, then flip them and repeat on the other side. 4: Place the sheet pan in the oven for 20-25 minutes, flipping halfway. 5: While the sweet potatoes roast, make the topping: Add all ingredients for the topping to a medium bowl. Mix to combine and set aside. 6: Make the goat cheese spread: Add the ricotta and the goat cheese to a separate bowl. Mix to combine. 7: Plate the sweet potatoes, place a dollop of the goat cheese mixture onto each round, then a small spoonful of the topping. 8: Top with lemon zest, honey, and fresh pepper, if using.View original recipe
