lemon zest

tsp salt

fl oz lemon juice

bunch fresh dill

fl oz honey
cup olive oil

tbsp fresh rosemary

tbsp capers

tbsp pepitas

bunch arugula

cup artichoke hearts
tbsp sun dried tomato
sweet potato

Instructions
1: Preheat the oven to 425°F. 2: Drizzle a large sheet pan with olive oil and brush to coat. Sprinkle with salt. 3: Spread sweet potatoes on the sheet pan and brush with olive oil and season with salt. Bake for 20-25 minutes, flipping halfway. 4: In a large jar or bowl, combine feta, sun dried tomatoes, artichoke hearts, olive oil, rosemary, parsley, lemon juice, and lemon zest. Toss together, cover, and refrigerate until ready to use. 5: To serve, spread arugula onto a plate, top with sweet potatoes, and add the feta mixture as desired.
