Instructions
1: Sauté chopped onion in coconut oil for a few minutes. 2: Add cauliflower rice, salt, and pepper, and sauté for a few more minutes. 3: Toss with chopped cilantro, lime zest, and lime juice. 4: Cut plantain into 1/3 inch slices and toss with olive oil and salt. 5: Bake plantains on a rack over a cookie sheet at 450°F for 10 minutes, then flip and bake for another 10 minutes. 6: Blend mango with chipotle sauce until smooth. 7: Serve the cauliflower rice in a bowl topped with baked plantains and drizzle the mango chipotle sauce on top.View original recipe
