
Thai Turkey Meatballs
Delicious Thai turkey meatballs served with a lightened spicy peanut sauce made using coconut milk and peanut flour. The meatballs are baked quickly and can be paired with cauliflower rice or noodles. Ready in less than 25 minutes!
What you need

cup coconut milk

tbsp coconut aminos

tsp pepper

lb ground turkey

tsp garlic powder

sriracha

tsp salt

tsp maple syrup

tbsp peanut flour

tbsp water

Instructions
1: Whisk together coconut milk, water, peanut flour, Sriracha, maple syrup, coconut aminos, liquid aminos, yellow curry powder, lime juice, and garlic powder until smooth. 2: In a bowl, mix together ground turkey, minced onion, chopped cilantro, chopped red bell pepper, minced mushrooms, coconut aminos, salt, pepper, and egg. 3: Form the mixture into 1.5-inch meatballs. 4: Bake in an oven-safe skillet for 18 minutes. 5: Remove from oven, pour the sauce over meatballs, and heat for a few minutes. 6: Top with scallions, chopped peanuts, chopped red pepper, and cilantro before serving.View original recipe
