
Thai Veggie Taquitos
Vegan and paleo Thai veggie taquitos filled with sautéed veggies and served with almond satay dipping sauce. Crispy and full of flavor, these taquitos are topped with cilantro, chopped chilis, and roasted edamame.
What you need

cup coconut milk

tsp salt
lime

cup cilantro

tsp curry powder

coconut oil

tsp ginger

onion

cup almond butter
Instructions
1: Warm up tortillas. 2: Mix sautéed veggies with cashews, salt, red pepper flakes, cilantro, and coconut aminos. 3: Fill the tortillas with the veggie mixture and roll them up. 4: Sear all sides in coconut oil on medium high. 5: Broil for crispness. 6: For the satay sauce, combine coconut milk, almond butter, coconut aminos, ginger, grated onion, lime juice, curry powder, salt, and red pepper flakes in a pot. 7: Bring to a boil over medium heat and stir until thick, then remove from heat.View original recipe
