
Veggie Hash with Poached Eggs
A delicious and healthy skillet braised veggie hash made with celery root, delicata squash, red onion, and kale. The veggies are sautéed to achieve caramelization, topped with poached organic eggs, and seasoned with Himalayan salt, pepper, and red pepper flakes.

Instructions
1: Chop celery root, delicata squash, red onion, and kale. 2: Sauté the chopped veggies in ghee on medium high heat for 3-4 minutes. 3: Season with Himalayan salt and pepper. 4: Periodically add small amounts of water to braise and soften the veggies. 5: Achieve nice caramelization on the outside. 6: Poach two organic eggs. 7: Serve the poached eggs over the veggie hash and sprinkle with red pepper flakes.View original recipe
