A delicious and healthy veggie turmeric frittata made with sautéed sweet potato, red onion, Swiss chard, and summer squash, blended with eggs and spices, cooked to perfection.

Instructions
1: Blend one egg and four egg whites with a big handful of parsley and spices until frothy. 2: Heat a cast iron pan on medium-high with coconut oil. 3: Add the blended egg mixture to the pan. 4: Sauté sweet potato, red onion, Swiss chard, and summer squash until cooked. 5: Cook for a few minutes then place under the broiler for 2 minutes to finish cooking. 6: Serve paired with an English muffin topped with avocado, coconut oil, and warmed blueberries.View original recipe
