
Whipped Ricotta & Brie Sweet Potato Bites
Delicious sweet potato bites topped with whipped brie and ricotta, sautéed apples, and dates. Perfect for a sweet and salty treat!
What you need
cup ricotta cheese
fl oz olive oil
lemon

tsp salt
tbsp fresh thyme

tbsp coconut oil
sweet potato

bunch scallion

cup date

brie
apple

cup pistachio nuts
Instructions
1: Preheat the oven to 425°F. 2: Drizzle a large sheet pan with olive oil, then brush it to coat. Sprinkle with salt and spread sweet potatoes on the pan, brushing tops with olive oil. Bake for 20-25 minutes, flipping halfway. 3: Remove the outer layer of the brie with a knife. Whip brie in a bowl with a hand mixer until spreadable. Mix in ricotta cheese and salt until smooth. Refrigerate for 20 minutes. 4: Heat the coconut oil in a pan over medium heat, then add apples, chopped dates, thyme, and salt. Sauté for 3-5 minutes, then add honey and lemon juice. Continue sautéing for 7-8 minutes until soft. Toss with pistachios. 5: On a plate, place sweet potatoes and top with whipped cheese and sautéed apple mixture.
