
Whipped Ricotta-Feta Dip

What you need

fl oz lime juice

tsp salt
cup corn
pepper

cup basil
tbsp olive oil

tsp cumin
cup ricotta cheese
shallot
poblano pepper

cup scallion

oz feta

jalapeno pepper

tbsp chipotle
Instructions
1: Preheat oven to 425°F. On a baking sheet, add poblano peppers, jalapeño pepper, and shallots, drizzle with olive oil, and bake for 20-25 minutes until soft. 2: Remove from oven, allow to cool, then remove skins and stems. Cut into small pieces. 3: In a food processor, add ricotta cheese, feta cheese, Greek yogurt, cumin, chipotle hot sauce, salt, pepper, and lime juice. Process for 30 seconds. 4: Add corn and process again for 30 seconds. 5: Transfer mixture to a bowl, add the poblano pepper mixture, and stir in chopped basil. 6: For the corn topping, heat olive oil in a sauté pan over medium-high heat, add corn and chives or scallions, and sauté for 2-4 minutes.View original recipe
