
Whole Roasted Broccoli

What you need

tbsp fresh dill

can white beans

tsp sugar

tsp salt

oz tahini
tsp lemon zest
tsp pepper
tbsp fresh parsley

tbsp lemon juice

tbsp water
tbsp olive oil

tsp dried oregano
tsp red pepper flake

tbsp scallion

Instructions
1: Preheat the oven to 425°F. Line a sheet pan with parchment paper and set aside. 2: Bring a large pot of salted water to a boil, add the broccoli, and cover. Boil for about 2 1/2-3 minutes. 3: Remove the broccoli from the pan, place onto a towel and let it dry for 5 minutes. 4: Add the broccoli to the sheet pan, cut side down. Drizzle with olive oil, oregano, salt, and pepper. 5: Place in the oven for 30-35 minutes, until slightly charred. 6: While the broccoli roasts, make the purée. Add the white beans, olive oil, water, dill, parsley, scallions, lemon juice, salt, sugar, pepper, and lemon zest to a food processor. Process until smooth. 7: Spread a healthy portion of the purée on a plate, then top with the roasted broccoli, tahini, olive oil, chopped almonds, onion granules, and red pepper flakes.View original recipe
