Instructions
1: Pat the chicken breasts dry and season with salt and pepper. Place in the fridge on a rack uncovered for 30+ minutes. 2: Remove the chicken from the fridge, pat dry again, and season with zaatar seasoning and lemon zest. 3: Heat a cast iron skillet over medium-low heat with coconut oil and place the chicken breast side down, cooking for 9 minutes. 4: Lift the chicken, add ghee or butter, and cook for 1 minute before flipping. Cook for another 5 minutes on the other side. 5: For the potatoes, cut them up and soak in ice water for 30 minutes then pat dry. 6: Coat the potatoes with olive oil, season with salt, pepper, garlic powder, and fresh rosemary, and bake for about 20 minutes at 425°F, flipping a couple of times. 7: Blanch the broccolini in salted water for 2 minutes, pat dry, and sauté over medium-high heat in olive oil, seasoning with salt and pepper to taste.View original recipe
