
Carrot Fries with Ricotta and Gremolata
This recipe combines crispy baked carrot fries with a savory ricotta and gremolata mixture, topped with feta cheese and a drizzle of honey for a delightful blend of textures and flavors.

cup fresh basil

cup ricotta cheese

tsp table salt

tsp paprika

tbsp corn starch

cup pistachio nuts

clove garlic clove
tbsp honey
tsp dried oregano

tsp lemon juice

tsp lemon zest

tsp onion powder

Instructions
1. Preheat the oven to 425°F (220°C) and place a sheet pan in the oven while it preheats. 2. Mix 3/4 teaspoon of salt, paprika, onion powder, and oregano in a small bowl. 3. Add carrot fries to the hot sheet pan and bake for 30-35 minutes, flipping halfway. 4. While the carrots roast, prepare the ricotta mixture by combining ricotta, honey, 1/4 teaspoon salt, pepper, and lemon juice in a small bowl. Mix well and set aside. 5. Make gremolata by processing pistachios and fresh basil in a food processor until a paste forms. 6. Combine the processed pistachio mixture with remaining salt, pepper, olive oil, garlic, and lemon zest in a bowl. Mix well and set aside. 7. Spread ricotta mixture onto a serving plate, then top with roasted carrots followed by the gremolata, chopped scallions, feta cheese, and a drizzle of honey if desired.
