
Honey-Jalapeño-Ginger Salad
A refreshing cucumber salad marinated in a dressing made of avocado oil, jalapeño, garlic, cashews, cilantro, ginger, tamari, honey, and rice vinegar. This salad absorbs the flavors of the dressing, providing a delicious, tangy, and slightly spicy taste.
What you need

tbsp avocado oil
tbsp fresh ginger

cup fresh cilantro

cup tamari soy sauce
tbsp salt
cup roasted cashews

lime zest
clove garlic
tbsp honey

lb persian cucumber

tsp red pepper flake

jalapeno
Instructions
1: Make the dressing. Heat a sauté pan over medium heat, add the oil, garlic, and jalapeño and stir. Cook for about 2 minutes then remove from the heat and set aside. 2: Add the cucumbers and the salt to a bowl and let them sit for 15 minutes. 3: Add the oil with the garlic and jalapeño to a jar, then add the cashews, cilantro, ginger, salt, tamari, honey and rice vinegar. Whisk or shake with a cap to combine. 4: Drain the cucumbers, rinse, pat dry and place them into a new bowl. Add a few large spoonfuls of the dressing and toss.
