
Feta-Dill-Pistachio Crusted Salmon
A delicious easy weeknight meal featuring salmon slow-roasted with a crunchy feta-dill-pistachio crust, served with a creamy tzatziki. This dish combines tangy, salty, and savory flavors while keeping the salmon super moist.

tsp lemon zest

tbsp lemon juice

lb salmon

tbsp fresh mint

tbsp fresh dill
tbsp yellow mustard

bunch arugula
fl oz honey

tbsp pistachio nuts
oz feta

tbsp dill

tbsp parsley

clove garlic
Instructions
1: Preheat the oven to 275°F. 2: Chop the pistachios finely on a cutting board, then add the feta and continue chopping until combined. 3: Add the parsley, dill, lemon zest, salt, and pepper to the mixture and chop to form a uniform mixture. 4: Place the salmon on a baking sheet, pat the top dry, season with salt and pepper, and brush with mustard. 5: Spread the pistachio and feta mixture on top of the salmon, pressing lightly, and drizzle with olive oil. 6: Bake in the oven for 30-35 minutes until cooked through; optionally broil for 1-2 minutes to brown the top. 7: While the salmon roasts, prepare tzatziki by draining the cucumber's liquid, then mix yogurt, cucumber, dill, mint, olive oil, garlic, lemon juice, salt, and pepper in a bowl. 8: Serve the salmon with tzatziki, arugula, honey, and capers.View original recipe
